Les Arancini siciliens sont originaires de Sicile et font partie intégrante de la gastronomie italienne. Ce sont des boulettes de riz farcies à la viande.
Arancini sicilien signifie « petite orange ». En effet, son nom et sa forme provient de l’orange, fruit cultivé en Sicile.
Il existe différents types d’arancini :
- Arancini con carne à base de viande, sauce tomate, petits pois et mozzarella
- Arancini al burro farcis avec de la mozzarella, jambon et sauce béchamel
- Arancini con spinaci farcis avec des épinards et de la mozzarella.
Aujourd’hui, ces boulettes de riz siciliennes sont devenues un mets très populaire et il est possible de le cuisiner selon différentes variantes à base de poisson ou végétarien…
Ingrédients pour 8 gros arancini sicilien con carne :
Pour la base :
- 300 gr de riz rond
- 90 cl de bouillon de viande
- 4 cuillères à soupe de pecorino
- 1 cuillère à café rase de safran
- 1 œuf
Pour le ragoût :
- 250 g de viande hachée de bœuf
- 200 gr de petits pois frais ou surgelés ou déjà cuits
- 2 cuillères à soupe de concentré de tomates
- 1 petit oignon
- 1 petite branche de céleri
- 1/2 verre de vin rouge
- laurier, persil plat
- huile d’olive vierge extra, sel et poivre
Pour la friture :
- Farine
- Eau
- Chapelure
- Huile pour friture
Préparation des arancinis siciliens :
Préparation : 5 heures Cuisson : 2 heures 20 minutes pour le ragoût ; 10 minutes pour le riz ; 3-4 minutes pour la friture
1/ Préparation du ragoût. Faire revenir l’oignon émincé dans de l’huile d’olive. Ajouter le céleri en dés et mélanger. Ajouter la viande par morceaux et bien mélanger. Laisser colorer, puis saler la préparation.
2/ Verser le vin sur le mélange et laisser évaporer. Ajouter le concentré de tomates et couvrir d’eau. Ajouter 2 feuilles de laurier et cuire pendant une vingtaine de minutes à feu moyen. A la fin des 20 minutes, baisser le feu (doux) et laisser cuire pendant 1h30-2h en ajoutant au besoin de l’eau chaude.
3/ 20 minutes avant la fin de la cuisson, rajouter les petits pois et quelques feuilles de persil plat. Laisser refroidir le ragoût.
4/ Cuire le riz. Porter à ébullition une casserole d’eau salée. Baisser le feu et laisser cuire le riz une dizaine de minutes. Le riz doit absorber l’eau tout en restant crémeux et bien hydraté. A la fin de la cuisson, rajouter du safran, le beurre, le fromage et l’œuf. Mélanger vivement. Laisser le riz au frigo pendant au moins 3heures ou toute une nuit.
5/ Le lendemain, fouetter 2 œufs entier dans une assiette. Verser 4-5 cuillères à soupe de farine dans une autre et de la chapelure dans une troisième.
6/ Reprendre le riz froid, sa texture doit être collante. Avec les mains humides former 8 boules. Pour chaque boule, creuser un trou au centre et y verser du ragoût. Refermer les boules et former une boule uniforme.
7/ Tremper les boules dans la farine, puis l’œuf, puis la chapelure. Chauffer l’huile de friture dans une casserole profonde. Plonger 2 à 3 arancini dans la casserole et laisser dorer. Laisser les arancini s’égoutter sur du papier absorbant. Effectuer la même manipulation avec le reste des boulettes de riz.
